and a PhD student in Food Processing and Human Nutrition in the Department of Food Technology, Faculty of Agricultural Sciences and Natural Resources Management, Ebonyi State University, Abakaliki, Nigeria. My research focuses on evaluating the nutritional potential of five selected Amaranthus species under different processing methods and their integration into community diets to enhance dietary diversity and improve nutritional outcomes.
