My name is Bernadette Hegnonamede Boyiako, a doctoral researcher in Food Processing and Human Nutrition in the Department of Food Science and Technology, Faculty of Agriculture and Natural Resources Management, Ebonyi State University (EBSU), Abakaliki, Nigeria. I am currently in my second year of doctoral studies, where my research focuses on Comparative Evaluation of Selected Amaranthus Species and Processing Methods for Enhanced Nutritional Quality and Community Integration in Ebonyi State, Nigeria.
My PhD research is jointly supervised by Professor Folusho David-Abraham of Ebonyi State University, Nigeria, and Professor Nadia Fanou-Fogni of the Université d’Abomey-Calavi (UAC), Benin, reflecting a strong cross-institutional and international academic collaboration. I am a citizen of the Republic of Benin and hold a Master of Science (MSc) degree in Food Science and Technology, awarded in 2020 by Eduardo Mondlane University, Maputo, Mozambique.
